Vaulted chocolate has been stored for years in our vault: a climated controlled special area of the Solkiki storerooms.
The texture confirms the aged nature of any Vaulted Solkiki bar, as do the myriad notes in the softened profile.
Monte Plata - an experimental lot from a traceable area of the Dominican Republic - shows real promise as a Vaulted option, where the profile remarkably improves with age.
Expect hints of Caramel Cookie and stroopwafel up front, evolving to incense or perfumed wood like the ceremonial Palo Santo. We end with a light touch of medecinal herbal yarrow, all underpinned by a solid chocolatey baseline.
Really, remarkable. Such a journey from our first tastings some years ago. Only a few bars are offered, we are working on obtaining more. Be decisive or regretful, your call!
